WILD Recipes with Aaron: Vegan Chocolate Fudge Cake

The second instalment of Aaron’s vegan recipes shows us how to make one of the tastiest desserts, chocolate fudge cake!


You can make it how I made it (healthy-ish) with coconut sugar & oil, raw dark chocolate & cacao. Or, use cheap icing sugar, chocolate and cocoa powder.


Equipment: A tin/dish lined with parchment paper.


Ingredients - 350g powdered coconut sugar/icing sugar. - 75g vegan chocolate. - 80g cacao/cocoa powder - 110g coconut oil - 90ml soya/oat/coconut cream - Pinch of pink/sea salt - 1 tsp vanilla extract.


Method

If using coconut sugar blend it in your blender until you have a fine powder.


Add the coconut oil to a non stick pan on a low heat. When it melts add the chocolate and stir until it’s melted. Now add the cream, salt and vanilla and keep string until the sugar has melted. You can see the results to aim for on the video.


Add the cacao powder and vigorously stir in until you have a thick chocolate liquid. Pour into the lined tray and leave to cool for 20-30 minutes. Pop in the fridge for two hours to set. Once set cut into squares and enjoy! Store in the fridge.

TIP: The fudge will get firmer over a few days so if you prefer it softer add another 10ml of cream. Always use a low heat or you will burn the ingredients.
